For a magnificent green, vitamin-rich dish, serve these Florentine sausages with spinach and baby potato salad.

ingredients

  • 1 pack (450 g) Amoré Florentina Italian sausage

Spinach and Baby Potato Salad :

  • to taste parmesan cheese, grated
  • 100 g green beans, blanched
  • 1 cup green peas
  • 10 baby potatoes, halved or quartered
  • 750 ml (3 cups) baby spinach

Dressing :

  • 45 ml (3 tablespoon) olive oil
  • 5 ml (1 teaspoon) honey
  • 5 ml (1 teaspoon) Dijon mustard
  • 20 ml (1 1/2 tablespoon) white wine vinegar
  • 2 packs (900 g) Amoré Florentina Italian sausages

Spinach and Baby Potato Salad :

  • to taste parmesan cheese, grated
  • 200 g green beans, blanched
  • 2 cups green peas
  • 20 baby potatoes, halved or quartered
  • 1500 ml (6 cups) baby spinach

Dressing :

  • 90 ml (1/3 cup) olive oil
  • 10 ml (2 teaspoon) honey
  • 10 ml (2 teaspoon) Dijon mustard
  • 40 ml (3 tablespoon) white wine vinegar
  • 1 package (450 g) Olymel Amoré Florentine sausages

Spinach and Baby Potato Salad

  • 3 cups baby spinach
  • 10 baby potatoes, cooked and cut in two
  • 100 g green beans, blanched
  • 1 cup green peas
  • Parmesan shavings

Dressing

  • 3 tbsp. (45 ml) olive oil
  • 1 ½ tbsp. (20 ml) white wine vinegar
  • 1 tsp. (5 ml) Dijon mustard
  • 1 tsp. (5 ml) honey
  • Freshly ground salt and pepper, to taste

instructions

Sausages

  1. Cook sausages following instructions on packaging and keep warm.

Salad

  1. In a bowl, combine all dressing ingredients. Check seasoning and mix with the spinach and the green beans and peas.
  2. Set each plate with some spinach mix and top with baby potatoes and Parmesan shavings. Serve with two sausages per serving.
