Mock chicken spring naan
- 2 naan breads
- ½ cup (125 ml) plain yogurt
- 6-7 leaves fresh mint, cut into fine strips
- ½ English cucumber, sliced thin
- 1 orange tomato, sliced
- 2 leaves Boston lettuce, shredded
- 150 g mock chicken, sliced
- 1/3 cup (85 ml) alfalfa sprouts
- Place the yogurt and mint in a mixing bowl, add salt and pepper and mix well.
- Spread yogurt/mint mixture on naan breads and cover with sliced cucumbers, overlapping them slightly. Lay out tomato and mock chicken slices and top with shredded lettuce and alfalfa sprouts. Serve immediately.
