- 150 g mock chicken, sliced thin
- 2 tbsp. (30 ml) mayonnaise
- 1 tbsp. (15 ml) old-fashioned mustard
- 4 slices very crusty country-style bread
- 1 small red apple, sliced
- 100 g sharp cheddar
- ½ tray radish micro-sprouts
- Mix together the mayonnaise and mustard and spread over the 4 bread slices.
- Arrange mock chicken on 2 of the slices, add the cheese and apple then the radish micro-sprouts. Close the sandwiches and serve immediately.
