- 6 slices bacon, cooked and chopped into sections
- 2 cups (500 ml) lobster meat
- ¾ cup (180 ml) herb mayonnaise
- 1 lemon, for juice
- 1 red pepper, cut into small dice
- 2 green onions, chopped
- 4 basil tortillas
- Place all ingredients except the tortillas into a bowl and mix well.
- Place tortillas on a work surface and top with the lobster mixture.
- Roll up the tortillas taking care to tuck in the 2 ends, cut in 2 and keep refrigerated in a sealable container.
