ingredients

  • 300 g honey-smoked ham, diced
  • 4 slices crispy bacon, cut in 2
  • 4 eggs, hard-boiled
  • 1/2 cup (125 ml) mayonnaise
  • 3 tbsp. (45 ml) chopped parsley
  • 4 English muffins, split and toasted
  • Salt and Pepper

instructions

  1. Chop the hard-cooked eggs and place in a bowl. Add the ham, mayonnaise and parsley, season with salt and pepper and mix well.
  2. Spread the mixture on the English muffin bases, add 2 half-slices of bacon per sandwich, close and serve immediately.
