Did you know that quinoa is super healthy? And if you make it into these mini bites with pepperoni, everyone is sure to want more!

ingredients

  • 7 ml (1/2 teaspoon) fresh basil, finely chopped, or dried basil
  • 15 ml (1 tablespoon) flat parsley, chopped
  • 85 g (1/3 cup) pepperoni cut into small cubes
  • 4 ml (1/4 tablespoon) dried oregano
  • 1/10 onion (small), finely chopped
  • 1 egg
  • 5 ml (1 teaspoon) olive oil
  • 1 clove garlic, finely chopped
  • 20 g parmesan cheese, grated
  • 40 g mozzarella, grated
  • 125 ml (1/2 cup) cooked quinoa, chilled

Dip :

  • 190 ml (3/4 cup) store-bought Marinara sauce
  • 10 ml (2 teaspoon) fresh basil, finely chopped, or dried basil
  • 30 ml (2 tablespoon) flat parsley, chopped
  • 165 g (cup) pepperoni cut into small cubes
  • 5 ml (1 teaspoon) dried oregano
  • 1/3 onion (small), finely chopped
  • 2 eggs
  • 7 ml (1/2 tablespoon) olive oil
  • 2 cloves garlic, finely chopped
  • 35 g parmesan cheese, grated
  • 75 g mozzarella, grated
  • 250 ml (1 cup) cooked quinoa, chilled

Dip :

  • 375 ml (1 1/2 cups) store-bought Marinara sauce
  • 15 ml (1 tablespoon) fresh basil, finely chopped, or dried basil
  • 45 ml (3 tablespoon) flat parsley, chopped
  • 250 g (1 cup) pepperoni cut into small cubes
  • 7 ml (1/2 tablespoon) dried oregano
  • 1/2 onion (small), finely chopped
  • 2 eggs
  • 15 ml (1 tablespoon) olive oil
  • 3 cloves garlic, finely chopped
  • 75 g parmesan cheese, grated
  • 150 g mozzarella, grated
  • 500 ml (2 cups) cooked quinoa, chilled

Dip :

  • 500 ml (2 cups) store-bought Marinara sauce
  • 250 g Olymel Amoré pepperoni cut into small cubes
  • 2 cups of cooked quinoa, chilled
  • 150 g grated mozzarella cheese
  • 75 g grated parmesan cheese
  • ½ small onion, minced
  • 3 cloves garlic, minced
  • 2 eggs
  • 15 ml olive oil
  • 45 ml (3 tbsp.) Italian parsley, minced
  • 15 ml (1 tbsp.) fresh basil, minced, or 1 tsp. dried
  • 7 ml (1 tsp.) dried oregano
  • Salt and fresh ground pepper

Dip

  • 500 ml marinara sauce

instructions

  1. Heat olive oil in a frying pan over high heat, then add onions and cook until transparent. Add garlic and cook 1 minute. Transfer to a large bowl and refrigerate.
  2. Add remaining ingredients except marinara sauce to the chilled onions and mix well. Adjust seasoning.
  3. Divide the mixture into a well-oiled mini-muffin tin. Bake at 375 °F (190 °C) 15 to 20 minutes. Serve with hot marinara sauce for dipping.
