For a lighter kind of chowder, add ham, pear and zucchini to make a simple soup into a tasty, hearty meal.

ingredients

  • 15 ml (1 tablespoon) butter
  • 125 ml (3/5 cup) potatoes, peeled and diced
  • 1/2 pear, peeled and diced
  • 1 pinch cayenne pepper, ground
  • 1/2 onion, chopped
  • 125 ml (1/2 cup) milk
  • 188 g old Fashioned Handcrafted Open Net smoked ham, diced or cut into strips
  • 15 g (1 tablespoon) all-purpose flour
  • 250 ml (1 cup) zucchinis, in round slices
  • 1/2 stalk celery, diced
  • 375 ml (1 1/2 cups) chicken stock
  • 30 ml (2 tablespoon) butter
  • 250 ml (1 cup) potatoes, peeled and diced
  • 1 pear, peeled and diced
  • 2 ml (1/4 teaspoon) cayenne pepper, ground
  • 1 onion, chopped
  • 250 ml (1 cup) milk
  • 375 g old Fashioned Handcrafted Open Net smoked ham, diced or cut into strips
  • 30 g (2 tablespoon) all-purpose flour
  • 500 ml (2 cups) zucchinis, in round slices
  • 1 stalk celery, diced
  • 750 ml (3 cups) chicken stock
  • 45 ml (3 tablespoon) butter
  • 375 ml (1 1/2 cups) potatoes, peeled and diced
  • 1 1/2 pears, peeled and diced
  • 2 1/2 ml (1/2 teaspoon) cayenne pepper, ground
  • 1 onion, chopped
  • 375 ml (1 4/5 cups) milk
  • 565 g old Fashioned Handcrafted Open Net smoked ham, diced or cut into strips
  • 45 g (3 tablespoon) all-purpose flour
  • 750 ml (3 cups) zucchinis, in round slices
  • 1 1/2 stalks celery, diced
  • 1125 ml (4 1/2 cups) chicken stock
  • 60 ml (4 tablespoon) butter
  • 500 ml (2 cups) potatoes, peeled and diced
  • 2 pears, peeled and diced
  • 3 1/2 ml (3/4 teaspoon) cayenne pepper, ground
  • 1 1/2 onions, chopped
  • 500 ml (2 cups) milk
  • 750 g old Fashioned Handcrafted Open Net smoked ham, diced or cut into strips
  • 60 g (4 tablespoon) all-purpose flour
  • 1000 ml (4 cups) zucchinis, in round slices
  • 2 stalks celery, diced
  • 1500 ml (6 cups) chicken stock
  • 375 g Olymel Smoked Ham, diced or cut into strips
  • 30 mL (2 tablespoons) of butter
  • 30 g (2 tablespoons) of flour
  • 1 onion, chopped
  • 1 stalk celery, diced
  • 500 mL (2 cups) of zucchini
  • 250 mL (1 cup) of potatoes, peeled and diced
  • 1 pear, peeled and diced
  • 750 mL (3 cups) of chicken stock
  • 250 mL (1 cup) of milk
  • 1.25 mL (1/4 teaspoon) of ground cayenne pepper
  • Salt and freshly ground pepper to taste

instructions

  1. Melt butter in a large pan over medium-high heat and sauté ham, diced or in strips. Add onion, zucchini, potatoes and pear, and cook for 2 to 3 minutes. Add flour and mix well.
  2. Add chicken stock and milk to pan, then add cayenne pepper and salt and pepper to taste.
  3. Simmer for about 15 minutes or until vegetables are cooked.

Suggestion

Sprinkle with grated strong cheddar to serve.
