Mediterranean chicken, gnocchi and veggie one-pan

- 2 Olymel Mediterranean-style chicken breasts
- 1 bag of pan-fried gnocchi (300 g)
- 250 ml (1 cup) cherry tomatoes, halved
- 1 red bell pepper, diced
- 15 ml (1 tablespoon) olive oil
- 500 ml (2 cups) baby spinach
- 100 g (3 1/2 oz) crumbled feta cheese
instructions
- Cut the chicken breasts into cubes.
- In a large bowl, mix the chicken with the gnocchi, tomatoes, bell pepper, and oil.
- Preheat the air fryer to 205°C (400°F).
- Oil the air fryer basket, then place the chicken mixture in it.
- Cook for 14 to 18 minutes, stirring a few times during cooking, until the inside of the chicken is no longer pink and the gnocchi are golden brown.
- Add the spinach and feta cheese. Stir gently and continue cooking for 1 to 2 minutes.
