Ham & Mango Spring Rolls

- 4 rice paper wrappers
- 6 to 8 slices of Olymel ham, rolled
- 1 mango, cut into strips
- 1 bell pepper (red, orange, or yellow), julienned
- 1 avocado, sliced
- A handful of lettuce or baby greens
- Fresh mint or cilantro leaves (optional)
Dipping Sauce:
- 1/4 cup mayonnaise
- 1 tbsp sriracha (adjust to desired spiciness)
- 1 tsp honey or maple syrup
- 1 tsp lime juice
- 1/2 tsp sesame oil
instructions
- Prepare all the ingredients in advance: slice the vegetables into thin strips and roll the ham slices.
- Soak one rice paper wrapper in warm water for 10–15 seconds until soft. Place it on a clean surface.
- In the center of the wrapper, layer a bit of lettuce or baby greens, then add the bell pepper, mango, and avocado slices.
- Add 1 to 2 rolled ham slices per spring roll.
- Add fresh herbs if desired (mint or cilantro).
- Roll tightly: fold in the sides, then roll from bottom to top like a burrito.
- Repeat with the remaining rice wrappers.
- Cut in half and serve with the dipping sauce.
