Spicy turkey sandwich on spelt and sesame bread

• 5 slices of Olymel Smart & Natural original cooked turkey breast

• 2 tablespoons of bomba mayonnaise

• 2 slices of smoked Gouda cheese

• 3 leaves of curly lettuce

• 3 slices of heirloom tomato

• 4–5 basil leaves

• 3 tablespoons drained giardiniera

• Spelt and sesame bread

Giardiniera

• 1 fennel bulb, diced

• 10 green beans, sliced into rounds

• 10 orange Nantes carrots, diced

• 1 red onion, finely chopped

• 3 red bell peppers, diced

• 1 cauliflower, cut into florets

• 1 L white vinegar

• 500 ml water

• 100 g (7 tablespoons) sugar

• 100 g (6 ½ tablespoons) olive oil

• 250 ml white wine

• 5 g (1 tablespoon) peppercorns (not ground)

• 4 bay leaves

• 5 g (1 tablespoon) dried oregano

• 50 g (3 ½ tablespoons) bomba

Bomba mayonnaise

• 2 egg yolks

• 1 tablespoon Dijon mustard

• 300 g canola oil

• 1 tablespoon white vinegar

• 1 tablespoon bomba

• Salt and pepper to taste
