Spaghetti sauce with pork back ribs

Mince onions and cut vegetables into small pieces.

Chop garlic.

Cut ribs into two or three bones.

In a large pot, sauté onions in olive oil over medium heat for two to three minutes. Add ground meat and sausage meat. Continue cooking for two to three minutes.

Add the tin of beef consommé and flake the meat with a wooden spoon. Continue cooking for five minutes.

Add garlic, bay leaves, hot sauce or chili flakes and Italian spices. Season to taste. Add diced tomatoes and cook for another five minutes.

Add vegetables, tomato sauce, tomato paste, barbecue sauce, raw ribs and honey.

Cook sauce uncovered over medium-low heat for 2 h 30.

When the sauce is cooked, remove the meat from the ribs, remove the bones and return the meat to the sauce. Keep a few ribs intact for presentation.

Serve over pasta with grated Parmesan and chopped flat-leaf parsley.
