Your oldest daughter has just announced she's having a graduation party. Put on a buffet with these Mexican pulled pork bites. You don't need a degree to know everyone will love ‘em.

ingredients

  • 1/2 pack (200 g) Olymel BBQ pulled pork
  • 125 g “Mexican blend” grated cheese
  • 1/10 red pepper, diced
  • 2 tortillas, cut in 6 triangles

Optional Mexican coleslaw as side dish :

  • 1/2 carrot, peeled and grated
  • 1/10 tablespoon fresh coriander, chopped
  • 1/4 teaspoon cumin
  • 30 ml (2 tablespoon) canola oil
  • 15 ml (1 tablespoon) lime juice
  • 1/4 tablespoon sugar
  • 1/2 cup cabbage, finely minced
  • 1 pack (400 g) Olymel BBQ pulled pork
  • 250 g “Mexican blend” grated cheese
  • 1/4 red pepper, diced
  • 4 tortillas, cut in 6 triangles

Optional Mexican coleslaw as side dish :

  • 1 carrot, peeled and grated
  • 1 tablespoon fresh coriander, chopped
  • 1/2 teaspoon cumin
  • 45 ml (3 tablespoon) canola oil
  • 30 ml (2 tablespoon) lime juice
  • 1/2 tablespoon sugar
  • 1 cup cabbage, finely minced
  • 1 1/2 packs (600 g) Olymel BBQ pulled pork
  • 375 g “Mexican blend” grated cheese
  • 1/3 red pepper, diced
  • 6 tortillas, cut in 6 triangles

Optional Mexican coleslaw as side dish :

  • 1 1/2 carrots, peeled and grated
  • 1 1/2 tablespoon fresh coriander, chopped
  • 3/4 teaspoon cumin
  • 60 ml (1/4 cup) canola oil
  • 45 ml (3 tablespoon) lime juice
  • 3/4 tablespoon sugar
  • 1 1/2 cups cabbages, finely minced
  • 1 package Olymel BBQ Pulled Pork, 400g
  • 4 tortillas, cut in 6 triangles
  • 250 g “Mexican blend” grated cheese
  • ¼ red pepper, cut finely diced

Optional Mexican coleslaw as side dish

  • 1 cup cabbage, finely minced
  • 1 carrot, peeled and grated
  • 1 tbsp. fresh coriander, minced
  • 45 ml (3 tbsp.) canola oil
  • 30 ml (2 tbsp.) lime juice
  • ½ tbsp. sugar
  • 1 tsp. cumin
  • Freshly ground salt and pepper, to taste

Avoid overcooking garnished tortillas to prevent softening and serve them immediately.

instructions

  1. In a bowl, mix all coleslaw ingredients. Set aside. Preheat oven to 350 °F (180 °C).
  2. Cook pulled pork following instructions on packaging and keep warm.
  3. Place tortilla triangles on lightly oiled cooking sheet, stuff with pulled pork, sprinkle with grated cheese and finish with diced pepper. Place garnished tortillas in oven and cook until cheese is golden.
