- 1 23cm (9-inch) pre–baked pie crust
- 225g (1/2 lb) light Table d’hôte Distinction ham, cut into 1cm (1/2 inch) strips
- 125ml (1/2 cup) sweet potato, diced and blanched
- 3 green onions, finely chopped
- 80ml (1/3 cup) red pepper, diced
- 250ml (1 cup) gruyère cheese, grated
- 3 eggs
- 180ml 3/4 cup) milk or 10% cream
- 1 pinch nutmeg
- 1 pinch Cayenne pepper
- Salt and ground black pepper to taste

- Preheat oven to 190°C (375°F).
- Garnish the pie crust with the ham, vegetables and cheese.
- In a bowl, combine eggs and milk with a whisk. Mix in the spices and season generously. Pour the mix into the pie crust.
- Bake in the centre of oven for 25 – 30 minutes.
Serve warm or chilled. |
