- 4 medium-sized zucchinis, cut in two lengthwise
- 30ml (2 tablespoons) butter
- 2 cloves of garlic, chopped
- 125ml (1/2 cup) red onion, chopped
- 250ml (1 cup) mushrooms, roughly chopped
- 2 seeded tomatoes, diced
- 2 175g (6 oz) packets of Olymel Distinction cooked ham, cut into strips
- 45ml (3 tablespoons) chopped, fresh garlic or 15 ml (1 tablespoon) dried basil
- Salt and ground black pepper to taste
- 250ml (1 cup) Gouda cheese, grated

- Preheat oven to 230°C (450°F).
- Make a cavity by removing some of the flesh from the zucchini halves. Chop up the flesh.
- In a frying pan, melt the butter over medium-high heat and brown the garlic, onion, mushrooms and the chopped zucchini for 2 – 3 minutes.
- Mix in the tomato and ham. Cook for 2 minutes.
- Remove from the heat, add the basil, and pepper generously.
- Garnish the zucchinis with the ham mixture. Cover with cheese and brown in the oven.
Serve immediately with rice. |
