Sausages in tomato sauce au gratin

Ingredients
  • 15ml (1 tablespoon) oil
  • 2 cloves of garlic, chopped
  • 1 onion, sliced
  • 125ml (1/2 cup) white wine
  • 1 796ml (28 oz) can diced tomatoes
  • 1 bay leaf
  • 2ml (1/2 teaspoon) dried thyme
  • 4 mild Olymel Italian sausages
  • Salt and ground black pepper to taste
  • 150g (1/3 lb) cheese of your choice (mozzarella, Swiss, cheddar, etc.), grated
 
Preparation
  1. In a saucepan, heat the oil and brown the garlic and onion for 2 – 3 minutes.
  2. Glaze with wine and reduce by one third.
  3. Add the tomatoes, bay leaf, thyme and sausages. Simmer gently over low heat for 15 – 20 minutes, or until the sauce thickens. Season to taste.
  4. Divide the sausages among four ovenproof plates. Cover with tomatoes, garnish with cheese and brown in the oven.
Serve with fresh pasta or polenta.
