- 15ml (1 tablespoon) oil
- 2 cloves of garlic, chopped
- 1 onion, sliced
- 125ml (1/2 cup) white wine
- 1 796ml (28 oz) can diced tomatoes
- 1 bay leaf
- 2ml (1/2 teaspoon) dried thyme
- 4 mild Olymel Italian sausages
- Salt and ground black pepper to taste
- 150g (1/3 lb) cheese of your choice (mozzarella, Swiss, cheddar, etc.), grated

- In a saucepan, heat the oil and brown the garlic and onion for 2 – 3 minutes.
- Glaze with wine and reduce by one third.
- Add the tomatoes, bay leaf, thyme and sausages. Simmer gently over low heat for 15 – 20 minutes, or until the sauce thickens. Season to taste.
- Divide the sausages among four ovenproof plates. Cover with tomatoes, garnish with cheese and brown in the oven.
Serve with fresh pasta or polenta. |
