Roast black pudding with apple and white wine sauce

Ingredients
  • 15ml (1 tablespoon) butter
  • 1 garlic clove, chopped
  • 1/2 onion, chopped
  • 180ml (3/4 cup) white wine
  • 1 sprig of rosemary or 1 pinch dried rosemary
  • 3 peeled apples, diced
  • Salt and ground black pepper to taste
  • 15ml (1 tablespoon) oil
  • 15ml (1 tablespoon) butter
  • 4 slices of Olymel natural black pudding
 
Preparation
  1. For the sauce: in a saucepan melt the butter and brown the garlic and onion.
  2. Glaze with the wine, add the rosemary and reduce by one-third.
  3. Add the apples and season to taste. Cook for several minutes, over a low heat, until the apples form a purée.
  4. Meanwhile, in a saucepan, heat the oil and melt the butter. Cook the black pudding for 2 – 3 minutes on each side.
Serve with roasted new potatoes and seasonal vegetables.
