| Ingredients |
- 15ml (1 tablespoon) butter
- 1 garlic clove, chopped
- 1/2 onion, chopped
- 180ml (3/4 cup) white wine
- 1 sprig of rosemary or 1 pinch dried rosemary
- 3 peeled apples, diced
- Salt and ground black pepper to taste
- 15ml (1 tablespoon) oil
- 15ml (1 tablespoon) butter
- 4 slices of Olymel natural black pudding

| Preparation |
- For the sauce: in a saucepan melt the butter and brown the garlic and onion.
- Glaze with the wine, add the rosemary and reduce by one-third.
- Add the apples and season to taste. Cook for several minutes, over a low heat, until the apples form a purée.
- Meanwhile, in a saucepan, heat the oil and melt the butter. Cook the black pudding for 2 – 3 minutes on each side.
Serve with roasted new potatoes and seasonal vegetables. |
