Glaze with the wine, add the rosemary and reduce by one-third. Add the apples and season to taste. Cook for several minutes, over a low heat, until the apples form a purée. Meanwhile, in a saucepan, heat the oil and melt the butter. Cook the black pudding for 2 – 3 minutes on each side. Serve with roasted new potatoes and seasonal vegetables.   1. For the sauce: in a saucepan melt the butter and brown the garlic and onion.

  3. Add the apples and season to taste. Cook for several minutes, over a low heat, until the apples form a purée.
