Honey bacon sweet potato appetizer

Ingredients
  • 12 Regular Olymel bacon strips
  • 3 or 4 Sweet potatoes, peeled
  • Freshly ground black pepper
  • Approx. 45ml (Approx. 3 tablespoons) Liquid honey
 
Preparation
  1. Cut the bacon strips in two. Align the pieces on a baking tray. Place in the oven for 12 minutes, or until they start to brown on the sides.
  2. Place the bacon on paper towels in order to remove the grease. Let them cool completely.
  3. In the meantime, prepare a pot of salted boiling water.
  4. Cut the sweet potatoes into cubes measuring 1.5cm (3/4in). Place them in the boiling water for 3 minutes. Drain and rinse with cold water.
  5. Absorb the excess water with a clean dish towel.
  6. Place the sweet potato cubes into a large bowl. Season with pepper to taste. Add the liquid honey and mix. The honey should lightly coat the potato cubes. Adjust the quantity if need be.
  7. Wrap each cube with a piece of bacon. Hold in place with a toothpick. Align the appetizers on a baking tray covered with parchment paper.
  8. Place in the oven 15 minutes before serving, or until the appetizers are nicely coloured.
  9. Arrange on a large platter to serve.
