- 12 Regular Olymel bacon strips
- 3 or 4 Sweet potatoes, peeled
- Freshly ground black pepper
- Approx. 45ml (Approx. 3 tablespoons) Liquid honey

- Cut the bacon strips in two. Align the pieces on a baking tray. Place in the oven for 12 minutes, or until they start to brown on the sides.
- Place the bacon on paper towels in order to remove the grease. Let them cool completely.
- In the meantime, prepare a pot of salted boiling water.
- Cut the sweet potatoes into cubes measuring 1.5cm (3/4in). Place them in the boiling water for 3 minutes. Drain and rinse with cold water.
- Absorb the excess water with a clean dish towel.
- Place the sweet potato cubes into a large bowl. Season with pepper to taste. Add the liquid honey and mix. The honey should lightly coat the potato cubes. Adjust the quantity if need be.
- Wrap each cube with a piece of bacon. Hold in place with a toothpick. Align the appetizers on a baking tray covered with parchment paper.
- Place in the oven 15 minutes before serving, or until the appetizers are nicely coloured.
- Arrange on a large platter to serve.
