Ham and peach chutney canapés

Ingredients
  • 15ml (1 tablespoon) butter
  • 1 garlic clove, chopped
  • 2 green onions, chopped
  • 2 peaches, stones removed, peeled and diced
  • 60ml (1/4 cup) red pepper, chopped
  • 45ml (3 tablespoons) rice vinegar, white wine vinegar or cider vinegar
  • 30ml (2 tablespoons) sugar
  • Salt and ground black pepper to taste
  • 24 pieces of Old–Fashioned Olymel Prestige smoked ham, sliced according to the size of the crackers
  • 24 crackers
  • Fresh coriander to taste
 
Preparation
  1. In a small saucepan, melt the butter over a medium-high heat and brown the garlic and onions for 30 seconds.
  2. Add the peaches and the pepper and cook for 2 – 3 minutes.
  3. Glaze with the vinegar, add the sugar and reduce the liquid by half. Season to taste and allow it to cool.
  4. Place a piece of ham on each cracker and garnish with a small quantity of peach chutney. Decorate with a sprig of fresh coriander.
Serve immediately.
