Add the peaches and the pepper and cook for 2 – 3 minutes. Glaze with the vinegar, add the sugar and reduce the liquid by half. Season to taste and allow it to cool. Place a piece of ham on each cracker and garnish with a small quantity of peach chutney. Decorate with a sprig of fresh coriander. Serve immediately.
