Bacon and cheese pancakes

Ingredients
  • 2 eggs
  • 15ml (1 tablespoon) sugar
  • 180ml (¾ cup) milk
  • 250ml (1 cup) flour
  • 1 pinch ground Cayenne pepper
  • 250ml (1 cup) strong cheddar, grated
  • 10 slices of lean Olymel bacon, cut into thick slices
  • Oil or butter for cooking
 
Preparation
  1. In a bowl, beat eggs with the sugar and milk.
  2. In another bowl, combine the flour and pepper.
  3. Form a hole in the centre and pour in the liquid mixture. Gradually add the dry ingredients and stir from the centre outwards. Mix well to obtain a smooth mixture.
  4. Add the cheese and bacon.
  5. In a frying pan, over medium heat, add a small amount of oil or butter and add the pancake mixture in large spoonfuls.
  6. Spread the mixture with the back of a spoon. Cook for approximately 2 minutes on both sides or until golden.
Serve immediately with fresh fruit and fried potatoes.
