- 2 eggs
- 15ml (1 tablespoon) sugar
- 180ml (¾ cup) milk
- 250ml (1 cup) flour
- 1 pinch ground Cayenne pepper
- 250ml (1 cup) strong cheddar, grated
- 10 slices of lean Olymel bacon, cut into thick slices
- Oil or butter for cooking

- In a bowl, beat eggs with the sugar and milk.
- In another bowl, combine the flour and pepper.
- Form a hole in the centre and pour in the liquid mixture. Gradually add the dry ingredients and stir from the centre outwards. Mix well to obtain a smooth mixture.
- Add the cheese and bacon.
- In a frying pan, over medium heat, add a small amount of oil or butter and add the pancake mixture in large spoonfuls.
- Spread the mixture with the back of a spoon. Cook for approximately 2 minutes on both sides or until golden.
Serve immediately with fresh fruit and fried potatoes. |
