The Caprese mini brochettes with pepperoni are a Friday night favourite. They'll help turn that end-of-the-week fatigue into new energy so you're ready for the weekend!

ingredients

  • 12 mini bocconcini cheese
  • 24 Olymel pepperoni, sliced
  • 12 cherry tomatoes

Basilic vinaigrette :

  • 3 leaves fresh basil, slivered (optional)
  • 1 clove garlic (small), finely chopped
  • 30 ml (2 tablespoon) olive oil
  • 15 ml (1 tablespoon) balsamic vinegar
  • 1 shallot, chopped
  • 24 mini bocconcini cheese
  • 48 Olymel pepperoni, sliced
  • 24 cherry tomatoes

Basilic vinaigrette :

  • 6 leaves fresh basil, slivered (optional)
  • 2 cloves garlic (small), finely chopped
  • 65 ml (1/4 cup) olive oil
  • 30 ml (2 tablespoon) balsamic vinegar
  • 2 shallots, chopped
  • 24 slices of Olymel Amoré pepperoni cut into quarters
  • 12 mini balls of bocconcini cheese
  • 12 cherry tomatoes

Basil vinaigrette

  • 30 ml (2 tbsp. ) olive oil
  • 15 ml ( 1 tbsp.) balsamic vinegar
  • 1 clove garlic, minced
  • 1 green onion, minced
  • 3 basil leaves, minced
  • Salt and fresh-ground pepper

instructions

  1. Combine all ingredients in a bowl and refrigerate.
  2. On mini kebab sticks or large toothpicks, alternate pepperoni slices, bocconcini and tomatoes.
  3. Sprinkle with vinaigrette just before serving.
