Roast beef in a mushroom and red wine sauce

Roast beef au jus
Suggested side dishes:
- Mashed potatoes.
- Roasted asparagus with Parmesan:
- After placing asparagus in an ovenproof dish, sprinkle them with 1 tablespoon of olive oil and with Parmesan cheese.
Pork roast in an apple and cranberry sauce
Suggested side dishes:
- New potatoes en papillote (in aluminum paper). Add olive oil and Provençal herbs or dried oregano to potatoes.
- Oven roasted asparagus with lemon and Dijon mustard:
- After placing asparagus in an ovenproof dish, sprinkle them with a mix of 1 tablespoon of olive oil, lemon juice to taste and 2 teaspoons of Dijon mustard. Add salt and pepper to taste.
Pork roast in a vegetable broth
Suggested side dishes:
- Oven baked or barbecued vegetable en papillote (in aluminum paper):
- Sprinkle assorted vegetables (potatoes, carrots, zucchini, bell pepper…) with olive oil and steak spices or any spice you prefer and cook in the oven or barbecue until cooked to taste.
Chicken breasts au jus with tarragon
Suggested side dishes:
- Steamed market-fresh carrots.
- Mushroom rice:
- Bring to the boiling point one can (10 fl. on. /284 ml) of chicken or vegetable broth mixed with an equal amount of water. Add to the broth 1½ cups of instant rice, ½ cup of sliced mushrooms and a pinch of dried thyme and simmer until rice is cooked (approx. 10 minutes). Add salt and pepper to taste.

- Spinach, citrus fuit and vegetable salad:
- To spinach leaves, add orange quarters and strips of red bell pepper roasted with olive oil and sunflower seeds or toasted almonds. Mixd balsamic vinegar vinaigrette and your favourite salad dressing until a smooth consistency is obtained. Add to salad.
